Recipe Week: Day 1

So if you read my last post I have to apologize.  I kept saying DIARY instead of DAIRY!  haha  I am dyslexic and was only half paying attention when I wrote it.  I even thought maybe it was wrong and was going to have my husband look at it and then got distracted and just hit POST.  DO you ever do that?  Get distracted and forget to proof read and go back and just want to kick yourself?  haha  I do that a lot.  My friend wrote me on facebook and was like, "Um, did you mean DAIRY?"  Thanks Jen ;)

Onto the recipe.  My poor niece is so sweet and such a good girl. She is very well behaved and is such a joy to be around.  Her name is Bradlie and she is SUPER allergic to all things dairy.  She can't have ANYTHING that has the milk protein in it.  Not only can she not have it, but if you eat a piece of cheese and then touch her with your fingers, her skin will break out in a rash!  SERIOUSLY!  The poor girl has broken out in rashes  from things like touching a window at a fast food restaurant.  They kept telling the nursery leader at church they couldn't give the kids fishy crackers because Bradlie can't have them.  They took that as "SHE" can't have them and ketp giving them to the everyone else. They kept having to explain it to them a number of times for them to understand.  Hello, kids touch EVERYTHING!  Then she could touch it and there she goes breaking out again.  One time she snuck into the pantry and found some kind of whey powder or something she couldn't have and poured it out and had it ALL Over her.  They had to take her to the ER because she couldn't breathe.  POOR GIRL!  I wanted to post a picture of how cute she is but they are all on my other lap top.

When Bradlie was turning one her mom wanted to make her a cake.  She asked me to help her find a recipe she could actually use.  I found a couple and sent them her way.  She said it was AWESOME and everyone loved it.  My brother said it was the best chocolate cake he had ever had.  I have not tried the recipe yet but I trust their judgement.  ;)   So here it is.  I want to give this a try next time I want to bake something yummy.

JIFFY DEVIL'S FOOD CAKE

1 1/2 cups flour
1 cup sugar
3 tbsp unsweetened cocoa powder
1 tsp baking soda
1 tsp salt
5 tbsp canola oil
1 tbsp white vinegar
1 tsp vanilla
1 cup cold water

Preheat oven to 350 degrees F. 

Mix dry ingredients together in a large bowl. Make 3 depressions in mixture.

Mix together oil, vanilla and vinegar. Pour into each depression of dry mixture. Pour 1 cup water over mixture. Mix until blended. Bake at 350 degrees for 30 minutes. Makes 1 layer.

For "frosting," you can sprinkle with a few chocolate chips, let melt and spread. Or you can dust the cake with powdered sugar. The cake is good with chocolate chips or other additions stirred into the batter as well.

What is sad is that is my favorite cake recipe with 6tbs oil instead of 3...I might have to try the healthier version. And yes I have it memorized enough to know that is Crazy chocolate cake without looking in my recipe book. ;)

Hey Lauren, I fixed the recipe. It was actually the exact same except it called for your recipe called for slightly more salt and slightly more oil. That was it though. Thanks for telling me :)
